And my life is complete. I’ve found a dessert that is healthy and satisfying! I discovered Rachael DeVaux aka Rachael’s Good Eats on Instagram and love seeing all the healthy snacks and meals she suggests. I have also been tempted by her cashew chocolate chip cookie skillet too many times! So naturally, I had to make it!
It. Did. Not. Disappoint.
Nope, not one bit. Y’all it’s warm and fluffy and just like a “pizookie” only healthy! I’m going to direct you guys to her blog to see the exact recipe and her suggestions on substituting ingredients. The only thing I substituted was almond butter in place of the cashew butter simply because I couldn’t find the cashew butter she suggests at my grocery store…which is why I called mine an almond chocolate chip cookie skillet. Depending on the ingredients you use it’s Gluten-free, dairy free, Paleo, and refined sugar free!
So, maybe I had two slices back to back. Don’t judge me until you try it! Adalyn, my 5 year old, helped me with the first piece and said she wished I could make this everyday. Well, now I just might!
